As a mom myself, I know how chaotic things can get, especially when you have little ones running around. That’s why I’m always on the lookout for recipes that are not only delicious but also easy to make. And let me tell you, these muffins check off all the boxes. This recipe is adapted from the Better Homes and Gardens cookbook.
Imagine warm muffins fresh out of the oven, oozing with melted chocolate chips and bursting with sweet banana flavor. With just a handful of simple ingredients and minimal prep time, you can have a batch of these mouthwatering muffins ready to go in no time.
I buy bananas every week for lunches and snacks. Some weeks, some bananas get too ripe. My go-to solution for overripe bananas is banana muffins.
My kids love it when I add chocolate chips to the muffins. But sometimes, I switch it up and add some chopped strawberries instead of chocolate chips.
Once the muffins are baked to golden perfection, they’re good to go for any time of day. Breakfast, after school snack, or a surprise treat in their lunchboxes – they fit the bill for any occasion.
Banana Chocolate Chip Muffin Ingredients
Flour: Flour provides the base for our muffins, giving them structure and texture. We used all-purpose flour in this recipe.
Sugar: Sugar adds sweetness to balance the flavor of the bananas and chocolate chips. We used white granulated sugar in this recipe.
Baking powder: Baking powder helps the muffins rise and become fluffy.
Salt: Salt enhances the flavor of the muffins and balances the sweetness.
Eggs: Eggs act as a binding agent, helping to hold the muffins together. We used a large egg for this recipe.
Bananas: Ripe bananas add natural sweetness and moisture to the muffins, as well as banana flavor. This is a perfect recipe to use overripe bananas.
Milk: Milk adds moisture to the batter, resulting in tender muffins. Our household drinks skim milk, so we made our banana muffins with skim milk.
Vegetable oil: Vegetable oil keeps the muffins moist and adds richness to the texture.
Chocolate chips: Chocolate chips add bursts of sweetness to every bite of the muffins. You can use your favorite chocolate chips in this recipe. You can use semi-sweet chocolate chips, milk chocolate chips, white chocolate chips or mini. I like to use dark chocolate chips.
How To Mash Ripe Bananas
Mashing ripe bananas with a fork is easy. Start by peeling the bananas and placing them in a bowl. Then, use a fork to press down on the bananas, mashing them against the sides of the bowl. Keep mashing until the bananas reach your desired consistency.
If you prefer chunkier muffins, leave some banana pieces intact. If you want smoother muffins, mash the bananas until they are completely smooth. Once mashed, the bananas are ready to be added to the rest of the muffin batter.
How To Make Banana Chocolate Chip Muffins
- Mix the dry ingredients in a large bowl: flour, sugar, baking powder, salt, and chocolate chips. Make a well in the center of the flour mixture and set aside.
- In another bowl combine the mashed bananas, egg, milk and oil. I add the egg, milk, and oil to the same bowl that I mashed the bananas in.
- Add the liquid mixture to the flour mixture. Stir just until combined.
- Spoon batter into prepared muffin tins, filling each 2/3 full.
- Bake 18 -20 minutes.
How To Store Banana Chocolate Chip Muffins
To store banana chocolate chip muffins, first, allow them to cool completely. Then, place them in an airtight container. Store the container in a cool, dry place, such as the pantry or cupboard. They can also be stored in the refrigerator to extend their freshness. When ready to eat, simply reheat them in the microwave for a few seconds or enjoy them at room temperature. Make sure to eat them within 3-4 days.
